Bikini

Yields 10 servings

Ingredients for the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

To prepare the Citrus Syrup: Place all the items inside a pot, bring to a gentle boil, mixing until the sugar dissolves. Next, turn off the stove allowing it to cool entirely. Transfer into an sterilised bottle, seal and refrigerate it in the refrigerator, it can be stored for around one month.

For the Batch Mix: Mix the specified liquids into one large bottle, allow it to infuse for one hour, then strain preferably using a fine cloth, to ensure it's perfectly clear.

When ready to serve: Add 85ml from the cocktail base to a mixing glass containing ice, and agitate carefully for a minute to chill. Filter to a frosted cocktail glass or equivalent, garnish with the cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
